Only 33 days to Christmas 🎄 , can you believe it 🙌🏻. I’m sooo looking forward to it.  This year I’ll be heading out to New York for Christmas, my birthday 🎂, and honeymoon 💕. I’ve been experimenting with making my own nut cheeses and I honestly believe this Vegan Triple Cream Brie is the closest thing to Brie I’ve made in a long time.

Mum sent me a picture recent harvest from one of my fruit trees 😍. It’s called Nasnaran Mandarin (Jeruk Limo) which is similar to lime (but much smaller in size). It is commonly used for making sambal/dressings for typical Indonesian cooking. Have you had this before? It’s so aromatic and intense!

If I have to pick my favourite grain, it’ll be rice every time. It’s delicious, nutritious and most importantly, it’s filling. This is especially important when making a plantbased salad, especially when you want something substantial that can keep you going for a few hours.
•
This Brown Rice, Kale and Bean Salad is one of my favourites salads to make because, not only is it easy to make, it’s also a great make-ahead dish for dinner party, lunch boxes or picnic. Unlike most salads, this salad stays fresh for about three days in the fridge. In fact, it tastes better the day after you make it.

It’s getting a bit warmer in Sydney now so I’m taking my salad spinner out from the pantry storage 🤣. What’s your favourite food in spring 🥗 ?

Foggy morning with a cup of Vitality Tea 🍵 from St.remio •
I’m loving the emergence of social enterprises - businesses that trade to tackle social problems and help improve the world we live in, like @St.Remio

St.Remio is a new specialty coffee and tea brand that is focused on giving back and empowering women.  They are in partnership with Sustainable Harvest in creating a program that gives back to the coffee growers directly at the source with a particular focus on Rwanda.
•
After the genocide, around 1 million men were killed, leaving the women of Rwanda in charge of running the coffee plantations. Sustainable Harvest has created a program that supports the women and educates them in running a business and using the best farming practices to ensure they get the best yield to support their community. They also run an incentive program to help the women receive quality of life products (such as a solar powered light they wear around their necks which allows them to walk home safely at night and allows their children to study in their house after the sun goes down as only 13% of households have electricity). A percentage of all sales of St Remio goes back to supporting this program, meaning consumers are making a difference directly at the source.

We all enjoy our coffee and tea, but we don’t often spend time thinking about exactly what has gone into it and the communities that grow it, so I love that St. Remio is giving back and supporting the growing community with their delicious coffee and tea. They have both Nespresso and Modo Mio compatible coffee and tea capsules as well as loose coffee beans. Their coffees are delicious and I absolutely love their tea range 🍁. Definitely worth checking out and getting behind this socially conscious brand 🌹. Have a lovely day everyone 💕
