Burger deliciousness at @soulburgerau Glebe 🍔 😍. The softest bun and the best Sriracha aioli in town! And the coconut milkshake is sooooooooooooooo gooooooood. It was my first 'milkshake' since I went vegan so it's been like... almost 4 years 😱. Died!

Shoutout to my girl Helen from @befraicheskincare who's recovering from (epic) @Finders_keepers weekend in Melbourne.
I took this picture during a few months ago on set with Helen for @befraicheskincare video promo. We played with rose petals, oils, roasted beans and more. So much fun 😍

Starting a business is hard, very hard. It takes a lot of work, persistence and dedication. I'm continually amazed and inspired by all the people I've met over the last few years who are taking massive risk following their dreams.

Open apple pie from last week 😋. You can find the recipe is a few post back. After months of not baking I've never been so inspire to bake! I think it's the cold weather ☺️. Made a few things this weeks which I haven't had a chance to post (things have been a bit on the crazy side at the moment!) but hopefully soon.
On another note. I'm very excited to see my parents and sis next month. They're coming to Sydney for the first time in a few years. A lot had change and I can't wait to show them around 😊. I've also booked my honeymoon! Guess where we going❓

I'm back to the straight and narrow today after a truly indulgent weekend at the Bastille Festival.

I know what you're thinking. These cookies are actually very healthy. It's like eating oatmeal really. It's oil-free, glutenfree and refined sugarfree. They're the chocolate version of my Healthy Vegan Anzac Biscuits which you can find on the blog. It's now six weeks to my wedding 👰 ...can't believe how fast time flies! Time to start hustling with wedding prep 😳. Lots to do today, will try not to panic 🙇‍♀️.Have great day everyone 😘. Keren x

Tonight's menu is stir-fry veggies with brown rice 🌱🥕 🍚 with a side of Hot Fuzz on Netflix! 🎥🤣. I've seen this movie three times already LOL. Absolutely love Sean Pegg! What's the most have you rewatched a movie?

Japanese Tempe and Veg Curry 🍛. I always have a packet of Japanese curry mix/bricks in the pantry for emergency dinner. It's so easy to use and why not? 🤣 Sometimes you want to spend less time cooking and more time wine-ing 🍷 .
I have my first podcast interview his morning (me as the interviewee 😱 🙈). After that I'm going to Air B&B head quarter to check out their office 😃. Apparently they have a really cool office so I'm looking forward to it! Might do some stories while I'm there so stay tuned.

Vegan Apple Pie 🤤. Hi everyone. I'm so much better today. Still not over the cold but feeling miles better.
I’ve been wanting to share this recipe with you. Made this a couple weeks ago and it was sooo good.

Don’t be intimidated by the look. It is actually pretty easy to make. The only time consuming part is the slicing and layering the sliced apple which I must say, I’m not very good at. But hey, if I can do it, you can do it too.

The pie crust is also a lot simpler to make than the traditional recipe. There’s no rolling required and because it’s made completely from oatmeal, it also healthier and #glutenfree. Recipe below if you want to try it or hit the link in the bio ❤️. Keren x 👨‍🍳Ingredients
Oat Flour Pie Crust
* 1½ cup oat flour*
* 2 teaspoon coconut sugar
* ½ teaspoon sea salt
* ¼ cup melted coconut oil
* 5 tbsp cold water
Apple Pie Filling
* 4-5 Granny Smith apples, peeled and cut into thin slices
* ⅓ cup coconut sugar
* 1 tsp ground cinnamon
* ½ tsp allspice
* ¼ tsp nutmeg
* ¼ tsp sea salt
* 1½ tsp fresh lemon juice
* 1 Tbs melted coconut oil

Method
For the pie crust
1. In a large bowl, mix together flour, sugar, and salt.
2. Stir in the melted coconut oil and mix until crumbly.
3. Add in the cold water to moisten the mixture to form a dough.
4. Press the dough into a pie pan using your fingers, including the side edges.
For the apple filling
1. Preheat oven to 180C.
2. Place apple slices and all the ingredients in a large bowl and gently toss the apples to coat. Let sit for 10 minutes.
3. Drain the apples through a sieve, reserving the liquid from the marinade.
4. Simmer the liquid in a small pan until it’s reduced to at least half and becomes somewhat thicker.
5. Arrange the apple slices in the pie pan, starting from the outside edge of the pan and spiraling towards the center. Insert apple slices into any gaps that you see.
6. Pour the reduced liquid onto the apple pie leaving 1-2 tablespoons for glazing.
7. Bake for 35-45 minutes or until the apples are tender and the pie crust is golden brown.
8. Glaze the pie with the remainder liquid. Allow to cool for at least 10 minutes before serving.
