A week ago I celebrated the four years anniversary of becoming a vegan. Four years! Four very humbling, challenging, eye opening, thrilling, wonderful years. I’ve learned so much from this journey that I thought the best way to celebrate my anniversary might be by sharing some of the skills I’ve learnt from my vegan journey

My goal with this post is not to convince you to go vegan but to share with you some of the valuable life skills I’ve learned from the last four years
•
One of it is Vulnerability. Being a vegan helps me become more vulnerable, which is not something that comes naturally to me. Growing up, I’ve always guarded myself against rejection, or the potential of being rejected, ridiculed or mocked. As a woman (and with Asian heritage) this can be extremely difficult, as we’ve always been taught that vulnerability is a weakness, not strength.

Being vulnerable is about being authentic, honest and true to yourself: not just revealing the pretty and shiny part of yourself, but all of you. Putting all your feelings and hopes on the line

It’s not easy, but thanks to this lifestyle I’ve gotten a lot of practice over the years

The best thing about these babies is that you can freeze them and then thaw them whenever you feel like some dessert, and they will still taste just as fresh as they did on the first day 👌🏻😋 And since I’m the only one with a sweet tooth in the house, I can easily make this 6 pack last a few weeks 😉. Hint: The White Chocolate Raspberry is the bomb!

I know it’s cheesy but I love this time of the year. I love seeing and feeling the hope and the joy that comes with the festivity. Everyone seems a little be more patient, happier, and kinder during this time, and it’s wonderful to see 😊

I’m still feeling a bit run down with cold but it hasn’t stopped me from feeling super excited about Christmas 🎄
We’ll just have to get through the next two weeks which is going to be super busy but hey, that’s life. Everything tastes so much better when you have to work for it.

I made these pizzettes the other day and they were so good!!! Here’s how you make them:
Ingredients:
- Premade Pizzettes base @woolworths_au - Tomato paste
- Mushroom, sliced
- Fresh Basil Leaves
- Dairyfree Cheddar @violife_foods 
Salt and pepper, grated

Just spread tomato paste onto the Pizzettes and then layer all the ingredients, adding the grated cheese last. 
Bake in 220C oven for 7 minutes on the top rack.

Took me 10 minutes to prep this and 7 minutes to bake. Friday Night Pizza 🍕 anyone? Keren x

⋆ NEW RECIPE ⋆ Penne with ‘Meaty’ Vegan Ragu.
Before I became a vegan, one of my favourite pasta sauces to make was ‘ragu’, a meat-based Italian sauce, which is rich, thick, delicious and full of flavours. It was, in more ways than one, awesome. So I recreated my favourite pasta dish, only this time with all plantbased ingredients. And it was such a delight. It actually tastes meaty and so satisfying, without actually containing any meat.

I thought I’d share my favourite waffle recipe today because I’m feeling like some waffles 🤣 (someone make some for me please). I haven’t had waffle for a long time because we have induction stove in the new house and I have one of those stove-top waffle pan (not electric one) that you need to put over the fire. Perhaps it’s time to buy an electric waffle maker?

On another note, I’m feeling soooo much better after a long 10 hour of sleep last night. It’s amazing what a good night sleep can do to your recovery. Sometimes, all you need is rest 😊

Best Ever Gluten Free Vegan Waffle
Ingredients
* ½ cup rolled oats
* ½ cup uncooked brown rice (whole rice)
* 1 cup dairy-free yogurt (I used homemade soy yogurt)
* 1 tbsp melted coconut oil (olive oil works fine too)
* 1 tbsp sugar or your favourite sweetener
* ½ tsp baking soda (sifted to prevent blobs of baking soda in your waffle)
* ½ tsp baking powder
* a pinch of salt

Method
1. Pour all ingredients into a blender and for a few minutes until smooth.
2. Pour enough batter into your waffle pan and cook until crispy. I use a stovetop waffle pan so I cook each side for about two minutes on medium high heat, but just follow your waffle maker's instruction if you’re using an electric waffle maker.
3. Slather with loads of your favourite nut butter and maple syrup and serve.
4. Store in the fridge for up to a week or in the freezer for up to a month. Just pop them in the toaster to reheat.
